Recipes from Tropea: spaghetti with garlic, oil and hot pepper
The dish: spaghetti with garlic, oil and hot pepper is prepared all over Italy. Here in Calabria hot peppers are used more than many other ingredients and the dish belongs to the humbler cuisine. Thus it is almost impossible to find this dish on a menu except in some farmhouse holiday centres.
Ingredients for 4 people: 500 gr spaghetti, salt, olive oil, 8 fresh hot chili peppers, 3 cloves garlic.
Method: wash and slice the peppers and fry them with a few seeds in abundant oil for a few minutes together whit the garlic. Cook the pasta in plenty of salted boiling water. When it is almost “al dente”, drain it and stir into the pepper and oil serve immediately.
